Speckled pea Microgreens are particularly fine for pea shoot salads with their sweet pea taste and prolific shoots. Pea Microgreens can be eaten shortly after they “pop” or grown on to their first or second set of true leaves. They last a long time in either the refrigerator or just out on the counter top. Water them from the bottom often….they drink heavily. They are a favorite with the Living Springs Farm staff.
